Prof S K Mbugua’s Biodata – 2013
Prof S K Mbugua is a Professor in Food and Industrial Microbiology at the department of Food
Science, Nutrition and Technology, and holds a PhD in applied and industrial microbiology from
Cornell University, USA; MSc in Food Science and Technology from Federal Institute of
Technology (ETH) Switzerland and University of Nairobi and BSc in Agriculture from
University of Nairobi. He was the first indigenous Chairman of the department of Food Science,
Nutrition and Technology, and founder of the Food Research Office in the department for which
he is still the scientific officer in-Charge. Prof Mbugua teaches courses in microbial applications
in food and industries (Biotechnology) and Products Development to both undergraduates and
postgraduates. He has researched and published widely on issues related to food processing and
functional foods as leveraged by microbial applications and enzymes. He has actively been
involved in collaborative research projects with regional and international partners overseas
funded by European Commission, DANIDA and USAID among other research sponsors. Prof
Mbugua is a Director of Trisquare Products Ltd, a food manufacturing business he founded, with
products portifolio that include fruit pulp purees produced by enzymes technology, Nutritionally
enhanced therapeutic porridges by microbial fermentation, Tomato cooking powder and
dehydrated Sukuma Wiki and Cabbages (leafy vegetables), and soon to be added the Cream
Liquers. Prof Mbugua is currently committed to food industrialization by nurturing developed
technologies, technology transfer and scaling-up, and markets and marketing innovation.
